Bacon & Chive Spaghetti Squash Cakes
Okay guys, I’m so excited about these. They are delicious and super filling! Since we are quarantined, I bought a HUGE spaghetti squash right when we found out what was going on with CoVid-19. I had been eating it every day for a few days and was getting super bored with it. So one morning I thought to myself, “hmmm I wonder if i can mix stuff with this and make a pancake thing'“. and…it worked! You can pretty much customize these to your taste or with what you have available as well.

BACON & CHIVE SPAGHETTI SQUASH CAKES
Serves 1
INGREDIENTS:
1 cup cooked spaghetti squash
1/4 cup almond flour
1 egg
1/4 tsp salt
1/4 tsp smoked paprika
1/8 tsp pepper
2 slices chopped cooked bacon
1 tbsp chives
2 tsp reserved bacon fat or other oil
INSTRUCTIONS:
Cook bacon on a baking sheet by adding to a cold oven set to 400 and cook for about 20 minutes.
When bacon is done cooking, crumble up 2 slices and add to a mixing bowl with squash, flour, egg, seasoning, chives and combine.
Preheat a non stick skillet on medium heat and add bacon fat
Use a 1/4 measuring cup to scoop the mixture into the skillet and form the “cakes”. Flatten each one so it’s not a big lump.
Cook for about 2-3 minutes each side until browned.
Serve with fried egg, more bacon and chives, avocado, my smoked paprika aoili or other sauce of coice! 🥓
