This pineapple matcha was inspired by the Starbucks drink that was released recently! I am obsessed with matcha so any chance I get to utilize it, I take it! I know this is a Summer themed drink, but I’ll take all the brightness I can to get me through this quarantine and the insane Spring weather that Minnesota has been having…warm, snow, sun, rain…it can NOT make up it’s mind! I’m over it..ha!

Anyway, this version is clean, refined sugar free and only 5 ingredients! I used honey to sweeten, but it doesn’t really need any if you want to leave it out. The pineapple gives it enough sweetness on its’ own.

BLENDED PINEAPPLE MATCHA

INGREDIENTS:
1 cup frozen pineapple (I used fresh and then cut it up and froze what I needed)
3/4 cup coconut water 
2 tsp honey (or other sweetener of choice)
1 tsp matcha powder (my favorite is Jade Leaf matcha)
1 scoop collagen powder - Optional (I like this brand or this brand)

INSTRUCTIONS:
Blend all ingredients together and enjoy!
