Being in quarantine has me so thankful that I love to cook. I worry about those people who have never cooked before and are now thrown into the constant need to cook for themselves and their family! I hope that some of the recipes that I share are helpful to those of you who are newer to cooking. I am for SURE not a pro and I’m still learning a TON every day, but I am thankful for this extra time to spend on it! Let’s continue to embrace this time and get better. Learn something new or improve on something that you already love!

Now on to the recipe…I love any type of mayo based salad. Chicken, tuna, EGG salad…give me all that creamy goodness. This is a basic egg salad with a little smoky spin! I hope you enjoy it.

SMOKY EGG SALAD
Serves 3

INGREDIENTS:
8 hard boiled eggs
1/4 cup homemade mayo or mayo of choice
1 tbsp mustard 
1/2 tbsp lemon juice  
1/4 + 1/8 tsp sea salt 
1/4 tsp pepper 
1/4 tsp smoked paprika 
1/4 tsp chipotle powder

INSTRUCTIONS:
Hard boil your eggs* and mash with a fork
Add all the other ingredients and combine!
Serve on a bed of lettuce, in a wrap, on a bun, on top of cucumber slices.


*I placed my eggs in the instant pot on the metal trivet that it comes with it. Add 1 cup of water and cook them on high pressure for 7 minutes and they’ll be perfect. Manually release the pressure and place in a bowl of cold or ice water for 1-2 min.
